Coconut Garlic bread

For years I have made garlic bread by crushing garlic, adding olive oil and spreading the mixture on good bread before toasting it in the broiler. And it has been delicious.

Recently, I decided to try replacing the olive oil with Nutiva’s raw virgin coconut oil. I did this because I have been enjoying this oil for some time and had a feeling the mixture of garlic and coconut would be a a pleasant change. Turns out that I was correct. This really was a delicious treat and change of pace. Imagine yourself on a tropical island, eating at the local Italian place, and enjoying the local spin on garlic bread!

The coconut flavor is mild enough not to overpower this side dish, but flavorful enough to add something special.  And there is always something wonderful about hot yummy fats baked into toasted bread.
